Job Description: Short Order Cook
Full-time and Part-time positions available. Seasonal position from May 2020 to September 2020.

We are excited to be opening Kitsune2Go May 2020 for our first season. Join us on an adventure and be part of the opening team for our Asian fusion restaurant. ESSENTIAL DUTIES AND RESPONSIBILITES:
Kitchen: Working under the kitchen manger and executive Chef duties include cooking specialty foods, under constant pressure to prepare meals quickly while ensuring quality is maintained, safety and sanitation guidelines are observed and guests are treated well.
•Willingness to learn how to prepare multi-Asian menu items is a must.
•Comply with hotel security, fire regulations and all health and safety and food safety protocol. •Understand all company policies, procedures, standards, specifications, and guidelines.
•Must arrive on time, in clean clothes, with proper hygiene and ready to work for each shift.
•Follows “First In, First Out (FIFO)” process for prepared foods, clean containers, labeled with date prepared and in proper rotation.
•Restock, organize, and maintain the back up of all ingredients, to insure we do not run out of product.
•Maintain the proper temperatures for all coolers and freezers, recording during every shift to maintain freshness of food.
•Communicates with management product shortages, broken equipment, maintenance, and hygiene issues.
•Cut, weigh, and prepare food items following procedures and recipes.
•Prepares, seasons, steams and cooks/stir fry’s in industrial woks all soups, meats, vegetables, seafood and other food items for consumption.
•Create sushi including cooking rice, rolling sushi, cutting and packaging for take-out. Cooks, prepares, and arranges the food to make an appealing arrangement for guests.
•Work with minimal supervision and make sure cooking stations stocked and clean, especially before and during prime operation hours.
•Must be able to handle a high-volume of production during rushes.
•Use appropriate utensils for cooking and avoiding cross contamination.
•Completes all opening and closing duties for scheduled shift, including the cleaning and shutting down of equipment such as deep fryer.
•Fill in where needed to ensure guest service standards and efficient operations.
•Take guests orders using a POS system, process credit card payments, accept cash payments and make correct change.
•Answer the phone and take guests orders over the phone.
•Resolve customer complaints while providing excellent customer service and provide information on menu items that are unfamiliar.
•Deliver meals within town limits by either bicycle or foot as required.
•Restock “Grab and Go” items in retail fridge maintaining “FIFO”.
•Restock and clean condiment area.
Cleaning Duties(as requested):
•Clean seating area after guests, including wiping tables, removing trash, emptying trash cans and recycling.
•Clean public and staff bathroom daily.
•Sweeping and mopping of both kitchen and seating area daily.
•Cleaning and sanitizing work areas and preparation areas after every use and at end of day.
•Doing dishes from food preparation ex. Cutting boards, pots and pans, bamboo steamers, knives….
•Scrubbing deep fryer, flat top and other line equipment at end of day and as needed.
•Wash, dry and maintain a seasoned wok.
•Keep a tidy dish area leaving it clean and empty of dishes at the end of your shift.
•Brake down and take out cardboard.
•Empty all garbage and recycling, replacing bags and taking to outside bins.
•Perform deep cleaning as assigned by management.
•Knowledge and a passion for preparation and cooking of Asian foods.
•Must be able to read and write English.
•Must have excellent customer service skills and be able to communicate well with customers, co-workers and management.
•Must have basic and accurate math skills.
•Experience working in a professional kitchen.
•Must be able to prioritize work and execute tasks with speed and efficiency.
•Ability to correctly identify product.
•Experience with common Asian cooking implements, not limited to, woks, fryers, rice cookers, steamers as well as all common professional cooking equipment found in a kitchen considered an asset.
•Must be able to demonstrate proficiency in professional knife-handling skills.
•Must be able to lift 50 pounds, and be able to walk, stand, bend and reach as the job requires.
•Workplace Hazardous Materials Information System(WHMIS) Certificate.(Can provide training)
•Complete a Canadian criminal record check and provide The Downtown Hotel with a copy of said receipt. Minor offenses not an issue.
•Be able to legally work in Canada.
