We are currently hiring full-time Machine/Relief Operators for morning and evening shifts at our ACE bakery located at 580 Secretariat Ct, Mississauga!

The Relief Operator is responsible for mixing and ensuring the smooth machine operation.

What you will be doing?

Scale all ingredients according to recipes.
Cut, weigh and place doughs in bins/mixing bowls and move into fermentation area.
Fill mixers with pre-measured ingredients in correct sequence.
Operate flour silo to add correct quantities to correct bowl.
Operate water meter, monitoring amount and temperature.
Troubleshoot dough, adding ingredients to ensure the quality expectations are being met and taking into account the variables such as ingredients, temperature, etc.
Set up laminating line for different SKUs installing correct cutting wheel, setting up belt correctly, and setting up cutters.
Start up and operate line, entering correct parameters into control panels. Make sure dough is feeding through.
Take all steps necessary to ensure continuous feed to proofer (i.e. keep flour containers filled).
Trouble-shoot belt problems, thickness issues, board congestion and any other interruptions to flow to proofer.
Identify more complex issues and call maintenance.
Take samples, check and record weight.
Keep the area clean and put away utensils in the proper location after use.
Comply with all applicable legislative and ACE Bakery food safety, health and safety and environmental policies and procedures.
Perform other related duties as assigned or required.
